food ‣ One of our most excellent dishes is a brisket recipe from The Golfer's Cookbook. That alone always makes us laugh during the prep. And the ingredients are unspeakably awful: an envelope of Lipton's Onion Soup Mix, a can of Campbell's Cream of Mushroom soup, a can of mushrooms, some onions, and red wine (a can's worth—that's what it calls for). And yet, through some physics-defying alchemy, it is reliably delicious. With apologies to the brain trust behind the Golfer's Cookbook, though, we'd say it's really about the brisket—a forgiving cut that rallies under almost any circumstances. So we're ready to mothball the duffers and expand our horizons with Stephanie Pierson's newly published The Brisket Book: A Love Story With Recipes.
